Ingredients Karnıyarık (Eggplants Stuffed with Ground Meat Sauce)

Before starting to cook, prepare the ingredients first. Here are the ingredients that must be prepared to make Karnıyarık (Eggplants Stuffed with Ground Meat Sauce) :

  1. 4 eggplants (you can use 5)

  2. 2 tbsp olive oil

  3. 1 tsp salt

  4. For stuffing:

  5. 250 grams ground meat of your choice

  6. 5 pickled chili pepper

  7. 3 cloves garlic

  8. 3 tbsp olive oil

  9. 2 green peppers

  10. 2 onions

  11. 1 crushed tomato

  12. 1 tsp salt

  13. 1 tsp ground black pepper

  14. 1/2 tsp cumin powder

  15. 1/2 tsp turmeric powder

  16. For baking:

  17. 2 tbsp pepper or tomato paste

  18. 200 ml water

Steps Karnıyarık (Eggplants Stuffed with Ground Meat Sauce)

After all the ingredients are ready, it's time to start cooking. Here are the steps for cooking Karnıyarık (Eggplants Stuffed with Ground Meat Sauce):

  1. Peel the eggplants stripy and make vertical cuts one side for each of them. Then leave them in a bowl of salted water for at least 30 mins.

  2. Take the eggplants out of the bowl and squeeze excess water. Put them on a baking tray, massage them with olive oil and salt. Broil them in the oven’s max setting until they’re soft and brown.

  3. While the eggplants are in the oven, prepare your stuffing for the eggplants’ belly.

    In a pan; chop onions, peppers, garlic, pickled chilis and start stir frying in the olive oil on medium heat. Add ground meat and stir until it gets some color. Lastly add crushed tomato and spices, simmer for 5 mins and take the pan off the heat.

  4. Take the grilled eggplants out of the oven and open up their bellies. And put the stuffing inside.

    The name “Karnıyarık” comes from that step. It means torn down belly.

  5. Mix together pepper paste and water, add it and give the eggplants a pool party.

    Bake it in the oven set max temperature setting about 30-40 mins until the eggplants are tender and the surface gets nice color.
